Preheat the oven to 190°C and grease a round pie baking tin. Roll out the pastry and put it in the tin, cutting off the edges. Pierce the pastry all over with a fork.
Fry the sliced onions in the olive oil on a medium heat for a few minutes, stirring, until the onions start to get golden. Add spinach and tuna and fry for a further minute. Spread the mixture onto the pastry in the tin.
In a bowl lightly beat together the eggs and cream, season with salt and pepper. Pour over the tuna mixture into the tin. Sprinkle with some grated cheese and bake for approx. 20mins until golden.
