Creamy pork with leeks and mushrooms

    Step 1

    Heat the oil in a large pan, add pork and fry until browned. Remove from the pan with a slotted spoon and put aside.

    Step 2

    Add leeks and mushrooms to the pan and cook, stirring, for approx 5 mins until softened.

    Step 3

    Return the meat to the pan, season with salt and pepper, add a splash of water, cover and cook until the meat is tender (add a little bit of water if it starts sticking to the bottom of the pan).

    Step 4

    Stir in the cream and ketchup, heat through and check for seasoning. Serve with rice.
