If you want to nibble on something a bit healthier than shop-bought biscuits during the Christmas holidays, try these cranberry slices. They keep in an airtight container for 1-2 weeks and are handy to reach for whenever you have a sweet tooth.

Preheat the oven to 150°C and line a 20x30cm baking tray with baking paper.
Beat the egg whites until firm, adding the icing sugar towards the end. Fold in the flour mixed with baking powder, followed by the dried fruits and nuts.
Spread the mixture on the baking tray and bake for 15mins.
Leave to cool, peel off the baking paper, cut to triangles or slices and drizzle with icing.
