Step 1
Cut the vegetables into bite-sized pieces.
Step 2
Heat the oil and fry the onions for 5 mins.
Step 3
Add garlic and the vegetables, tomatoes, tomato puree, paprika and seasoning. Fry for another 5 mins, then transfer to a casserole dish.
Step 4
Bake at 210°C/fan 190°C for about 40 mins until the vegetables are cooked.
