Tuna and Spinach Potato Gratin

Slice the potatoes into ½ inch slices and boil them in a pan of salted water for 10mins, drain.
In the meantime heat the oil in a deep non-stick pan, add the onion and fry for 3mins. Add spinach and stir for a few minutes until it wilts. Sprinkle in the flour, stir well and slowly pour in the cream, stirring. Bring to the boil, add tuna and garlic. Season with salt.
Lightly oil a large rectangular baking dish and layer half of the cooked potatoes on the bottom. Sprinkle lightly with salt. Spread the tuna and spinach mixture on the potato layer and top with the other half of the potatoes. Sprinkle with grated cheese and bake in a preheated oven at 180°C for 25-30mins.
