    Step 1

    Heat the oil in a pan, add onion and fry for 2 mins, then add the mushrooms and fry for another 5 mins, stirring occasionally, until golden.

    Step 2

    Season the eggs with salt and pepper and add to the pan, stirring all the time, until they’re the consistency you like them.

    Step 3

    Stir in the grated cheddar and serve on top of toast or with crusty bread as part of your brunch.
