    Step 1

    Boil the rice according to the instructions on the packet.

    Step 2

    While the rice is cooking, heat the oil in a pan, add onions and gently cook for 5 mins. Add courgettes, pepper, peas, tomato puree, water and sugar and stir well. Cover and cook on a low heat for 10-15 mins.

    Step 3

    Mix the vegetable mixture with the cooked rice, add ketchup and half of the grated cheese and stir well. Serve sprinkled with the remaining cheese.
