Grated apple cake

    Step 1

    Put flour, baking powder, 120g/4½ oz sugar, butter and 4 egg yolks into a bowl and combine with your hands until they come together in a dough.

    Step 2

    Take 1/3 of the dough and put in the fridge for 15-20 mins.

    Step 3

    Press the remaining 2/3 of the dough into a large lightly greased tin and cover with apples.

    Step 4

    Sprinkle with cinnamon and sultanas.

    Step 5

    Beat the egg whites until stiff, fold in the remaining sugar (80g/2½oz) and spread over the apples.

    Step 6

    Take the refrigerated dough and grate it coarsely, then sprinkle over the egg whites.

    Step 7

    Bake at 200°C/fan 180°C for 35-40 mins.
