Wonderfully moist apple and cinnamon cake




    Step 1

    Preheat the oven to 210°C/fan 190°C and line a base of round cake tin with baking paper.

    Step 2

    Beat the sugar and egg yolks for a minute with electric blender, then pour in the oil and milk, still beating.

    Step 3

    Mix together the flour, cinnamon and baking powder and add to the wet mixture, beating until smooth.

    Step 4

    Beat the egg whites in a separate bowl until fluffy and gently fold into the mixture, then fold in the apple pieces.

    Step 5

    Transfer to baking tin and bake in the preheated oven for 20 mins, then turn down the temperature to 180°C/fan 160°C and bake for further 20 mins or until a skewer inserted into the cake comes out clean.
