Vegetable soup with meatballs

    Step 1

    Melt the butter in a large pan, add leek and carrot and cook gently for 5 mins.

    Step 2

    In the meantime mix together minced pork, crushed cream crackers, egg, mixed herbs and salt and shape the mixture into small meatballs.

    Step 3

    Add water and stock cube into the pan, bring to the boil, add meatballs and simmer, covered, for 15-20 mins. Season to taste and serve.
