    Heat the oil in a large pan, add onion and gently fry for about 5mins. Add the rest of the vegetables, water and stock cube, bring to the boil, cover and simmer for an hour. Add dill, vinegar and salt & pepper to taste. You can serve with a dollop of plain soya yoghurt (optional).
