Turkey with chorizo and beans in tomato sauce

    Step 1

    Heat the oil in a large pan, add onion and cook for 2 mins, then add chorizo and cook for further 5 mins, stirring occasionally.

    Step 2

    Cut the turkey breast into small pieces and add to the pan. Season with salt and cook on a high heat for about 5 mins, stirring.

    Step 3

    Add tomatoes, tomato puree, water, stock cube and sugar, cover and cook on a low heat for approx. 20 mins, stirring occasionally.

    Step 4

    Add the tinned beans, heat through, stir in the parsley and check for seasoning. Serve over pasta.
