Tuna and pineapple rice

    Step 1

    Cook the rice in a pan of salted boiling water until tender.

    Step 2

    In the meantime heat the oil in a pan, add onion and cook for 5-8 mins; add tuna.

    Step 3

    Chop the pineapple and add to the pan together with the juice; heat through.

    Step 4

    Add the cooked rice, parsley and most of the grated cheese. Stir well and season to taste.

    Step 5

    Serve sprinkled with the remaining cheese.
