Tomato, bacon and chive quiche

    Step 1

    Put the flour and butter into a large bowl and rub the butter into the flour, adding 2 tbsp of cold water as you go to make smooth dough. Roll out the dough and press it into a flan dish. Place in a fridge for an hour.

    Step 2

    Fry the chopped bacon in a little oil for a minute or two, stirring all the time. Remove from the heat and set aside.

    Step 3

    Whisk together crème fraîche and eggs, season with salt and pepper, then stir in the tomatoes, chives, 2/3 of the grated cheese and bacon.

    Step 4

    Pour the mixture into the chilled base, sprinkle with the remaining cheese and bake at 200°C/fan 180°C for 40 mins. Serve with green salad.
