Tomato and anchovies spaghetti

    Step 1

    Cook the spaghetti in a pan of salted boiling water; drain.

    Step 2

    Heat the oil in a saucepan, add garlic and sauté for one minute.

    Step 3

    Add anchovies and cook, stirring, for a further minute.

    Step 4

    Add tomatoes, olives and parsley, season with salt and pepper and cook, uncovered for 5-8mins.

    Step 5

    Stir in the cooked spaghetti and serve sprinkled with parmesan.
