Strawberry Swiss Roll




    Step 1

    Preheat the oven to 180°C/fan 160°C and line a baking sheet with baking paper.

    Step 2

    Beat the egg whites until soft peaks form, then gradually beat in the icing sugar until glossy and firm.

    Step 3

    Gently stir in the egg yolks and finally sift in the flour and baking powder.

    Step 4

    Pour into the tin, level the surface and bake for 18-20mins.

    Step 5

    Sprinkle a clean tea towel with icing sugar and turn the hot swiss roll out on the tea towel.

    Step 6

    Remove the greaseproof paper from the top of the swiss roll and roll it up together with the tea towel. Leave to cool, then carefully unroll.

    Step 7

    Spread with strawberry jam and roll up, sprinkle with some more icing sugar and cut into slices.
