Sausage and onion quiche




    Step 1

    Put the flour and butter into a large bowl and rub the butter into the flour, adding 2 tbsp of cold water as you go to make smooth dough. Roll out the dough and press it into a flan dish. Put in a fridge while you make the filling.

    Step 2

    Preheat the oven grill and grill the sausages until golden and cooked through. Then cut into thick slices.

    Step 3

    In the meantime heat the oil in a large pan, add the onion and cook for 5 mins, then add pepper and cook for further 5 mins.

    Step 4

    Whisk together milk, crème fraîche and eggs, season with salt and pepper, then stir in the grated cheese.

    Step 5

    Preheat the oven to 180°C, pierce all over the base with fork and bake for 5 mins.

    Step 6

    Spread onions, peppers and sausage slice onto the pre-baked base and pour over the eggy mixture. Bake for 40 mins until golden.
