Sausage and mushroom casserole

    Step 1

    Fry the sausages for 3-5 mins in a large deep non-stick pan, then remove from the pan and set aside.

    Step 2

    Add oil to the pan with the onion and cook for 2 mins, then add mushrooms and garlic and cook for further 2-3 mins.

    Step 3

    Cut each sausage into 4 chunks and put them back to the pan.

    Step 4

    Add the tomatoes, sugar and thyme, season with salt and pepper, cover and gently cook for 20 mins. Serve with crusty bread.
