Sausage and leek bake

    Step 1

    Put the potatoes in a pan of boiling water and simmer for 5 mins; drain.

    Step 2

    Heat the oil in a large pan, add sausages and cook, turning frequently for 5-8 mins until golden. Remove from the pan and cut into large chunks.

    Step 3

    Add the leek into the pan and gently cook for 3-5 mins.

    Step 4

    Return the sausages into the pan, pour in the stock and bring to the boil.

    Step 5

    Add apple sauce, lemon juice and mix well.

    Step 6

    Stir in the cornflour mixed with water and keep stirring until the sauce thickens.

    Step 7

    Preheat the oven to 200°C/fan 180°C.

    Step 8

    Divide the mixture between 2 shallow ovenproof dishes, cover with potato slices, sprinkle with grated cheese and bake for 20-25 mins until golden.
