Roast butternut squash, spinach and goats cheese salad

    Directions

    Step 1

    Roast the butternut squash chunks for approx. 25mins until soft.

    Step 2

    Divide the spinach leaves between two bowls, add the roasted squash, a few slices of red onion, crumble in some goat's cheese and sprinkle with pumpkin seeds.

    Step 3

    To make the dressing mix all ingredients in a small cup until blended and drizzle over the salad.
