Rice, ham and broccoli bake

    Step 1

    Cook the rice in a pan of salted boiling water until tender.

    Step 2

    Cook or steam the broccoli florets for 4 mins.

    Step 3

    Preheat the oven to 200°C/fan 180°C and grease an ovenproof dish.

    Step 4

    Beat the egg yolks with butter, then stir in the cooked rice, broccoli, ham and half of the grated cheese. Season with salt, pepper and all purpose seasoning.

    Step 5

    Beat the egg whites until soft peaks form and gently fold into the rice mixture.

    Step 6

    Transfer to the prepared ovenproof dish and bake for 15 mins. Then sprinkle with the remaining cheese and bake for further 15 mins.
