Red Fruit Tray Bake

I used red grapes this time, but I’ve also made this cake with other red fruits ( I usually throw in a slightly defrosted bag of frozen strawberries or raspberries or cherries). No matter what fruit you put in it’s super quick to prepare and never disappoints.

Line a 35cm x 25cm baking tin with baking paper and preheat the oven to 180°C.
Put the eggs, sugar and vanilla extract in a bowl and beat well for a few mins until fluffy. Add oil, milk and flour mixed with baking powder and beat for approx. 10 seconds until just combined. Pour into the prepared tin and scatter the gapes on top. Bake for approx. 25-30min or until a skewer comes out clean.
Take the cake out of the oven, leave it in the tin for 5mins, then turn out onto a chopping board or baking sheet, leaving the paper on top, until the cake cools down.
