Mrs Scotland’s Caribbean Macaroni Pie

This recipe was given to use by a local lady from Antigua.

It’s been a family favourite for around 12 years. This recipe is open to so many variants. Mix with flavoured cheese (for example Jalapeño cheddar or caramelised onion). Add chicken, peas or bacon. Use as a side dish or main; use as much cheese on top as you like or a little less depending on flavour or strength of cheese.

    Step 1

    Heat oven to 180 degrees

    Step 2

    cook macaroni in boiling water and drain

    Step 3

    mix onion, macaroni, butter, milk, garlic, paprika, and 1/2 cup of white cheddar

    Step 4

    put into a greased baking dish

    Step 5

    sprinkle 1 cup of mixed cheese on top

    Step 6

    bake until golden brown and remove from oven

    Step 7

    Top with remaining cheese and bake again until golden brown

    Step 8

    Remove from the oven and allow to cool for 15 minutes before serving
