Mexican food is such a treat in my home and is great on cold evenings to warm up! These home made enchiladas are so delicious and a lot healthier then purchasing a kit from the shops 👩🏻🍳
Ingredients
Directions
Begin by chopping the chicken into chunks and slicing the onion and pepper.
In a hot pan sauté the onions until soft then add the peppers, bamboo shoots and kidney beans for an extra 5 minutes then set aside
Fry off the chicken and add in your vegetables followed by the tomatoes and chilli powder. Leave it simmering on a low heat for 10 minutes.
Cut the wraps in half into semi circles and place 2-3 spoons of the enchilada mix into each wrap and roll.
Place each wrap into a baking tray and sprinkle cheese of your choice over the top. I use mozzarella as it melts deliciously.
Bake for 10 minutes then sprinkle the chopped olives over the top and bake for another 5 minutes until golden.
Serve and enjoy.
