    Step 1

    Melt the butter in a pan, add leeks and gently cook for 3 mins.

    Step 2

    Add garlic and cook for another minute.

    Step 3

    Pour in the water and milk, add potatoes and stock cubes, cover, bring to the boil and simmer for 20-25 mins.

    Step 4

    Season with salt and pepper and serve.
