Iced Fruit Loaf





    Step 1

    Put all ingredients except the dried fruit into a bowl and using a mixer with a dough hook mix on a low speed until the dough comes together. Keep kneading for about 10mins. Work in the dried fruits towards the end. Alternatively, use the dough program on a bread maker.

    Step 2

    Let your dough rise in a covered bowl in a warm place until it doubles in size.

    Step 3

    Line a loaf tin with baking paper and transfer the dough into the tin. Bake at 160°C (fan) for 35 mins or until a skewer inserted in the middle comes out clean. Leave to cool.

    Step 4

    To make the icing, mix together 5 tbsp icing sugar with 1 tbsp water and drizzle over the loaf.
