Iced coffee cake




    Step 1

    Preheat the oven to 200°C/fan 180°C and grease and base line of 2 cake tins.

    Step 2

    Put the brown sugar, margarine and eggs into a large bowl and beat well.

    Step 3

    Add flour and baking powder, beat until combined and finally add in the dissolved coffee.

    Step 4

    Divide between the prepared cake tins and bake for approx 25 mins or until a skewer inserted into the cake comes out clean.

    Step 5

    Leave in the tins for 5-10 mins and then turn to a wire rack to cool down.

    Step 6

    For the icing mix together all the ingredients, sandwich the cakes together with half of the icing and spread the remaining icing evenly over the top of the cake.
