Ham, leek and potato pie

    Step 1

    Preheat oven to 200°C.

    Step 2

    Heat 1 tbsp oil in a pan, add leeks and gently cook for 5 mins, stirring, until softened.

    Step 3

    Make the soup according to packet instructions but with just half litre (17 fl oz) of water.

    Step 4

    Stir the leeks and ham into the soup and pour the mixture into an ovenproof dish.

    Step 5

    Arrange the sliced potatoes on top, season lightly with salt, drizzle with some olive oil and bake for 45 mins.
