Grilled pork medallions with courgettes and two cheeses

    Step 1

    Turn the grill on high, pour some oil on a large baking tray and put under the grill while it’s preheating.

    Step 2

    Put the sliced steak into a large bowl and season well with salt, pepper, dried garlic and parsley.

    Step 3

    Cut the courgette lengthways in half and then cut each half into thicker slices. Add to the meat together with onion and stir everything together.

    Step 4

    When the oil is hot, carefully take the baking tray out of the oven and spread the meat mixture on it. Put under the hot grill and grill until golden, stirring occasionally so the meat is cooked evenly.

    Step 5

    When the meat is cooked, sprinkle the two cheeses on top and return under the grill for a minute until it melts. Serve with chips or mash.
