Eggs on toast

For a meaty version you can add bits of bacon or ham when frying the onion during step 1



    Step 1

    Heat the oil in a small pan, add onion and fry for a minute, stirring.

    Step 2

    Add pepper and fry for another minute, stirring.

    Step 3

    Turn down the heat, add eggs, then stir until cooked (same as if making scrambled eggs). Season with salt.

    Step 4

    When the eggs have the desired consistency (I like my scrambled eggs a little runny) add cheese and stir for a few seconds until the cheese starts to melt but still holds its shape.

    Step 5

    Toast the bread and top with the eggs, sprinkle with paprika and serve.
