Crisp Crusted Tofu [vegan, gluten free]

I love using chips as a breading because you can make them any flavor you like and also makes things easy.

    Step 1

    1. Preheat the oven to 400°F and line a baking sheet with parchment paper. 2. Wrap the tofu in a clean towel and press lightly to get some moisture out. 3. Meanwhile take 3 bowls. Add the cornstarch to one, almond milk and apple cider vinegar to one, and the crushed chips in the other. 4. Coat the tofu in the cornstarch then dip into the milk mixture. Coat with the crushed chips and place on the baking sheet. Bake for 30 minutes. 5. Enjoy!
