Courgette Fritters (GF)

    Step 1

    Coarsely grate the courgettes into a bowl, sprinkle with some salt and leave to stand for 5mins, then squeeze out as much liquid as you can.

    Step 2

    Add the rest of the ingredients and stir well to combine. Season well with salt.

    Step 3

    Heat a good lug of oil in a frying pan, take a tablespoon of the mixture and put it on the frying pan, flattening down with the back of the spoon to make a patty. Repeat with the rest of the mixture (you should be able to fit 4 patties into a pan). Fry them for approx. 5 mins each side until golden.

    Step 4

    I served them with mash, tzatziki and pan-fried kale.
