Cheesy chicken and bacon bake

    Step 1

    Preheat the oven to 220°C/fan 200°C and lightly grease a large shallow ovenproof dish.

    Step 2

    Put the chicken fillets on a worktop and carefully cut them horizontally to make 8 thin fillets.

    Step 3

    Arrange 4 bacon rashers on the bottom of the ovenproof dish, place 4 chicken fillets on the rashers, top with half on the onion slices and sprinkle with half of the grated cheddar. Repeat the layers, finishing with grated cheese on top.

    Step 4

    Gently press each pile in the dish with your hands, drizzle with a little oil and cover the dish with a tin foil.

    Step 5

    Bake for 30 mins, then remove the tin foil and bake for a further 10-15 mins until golden.
