Breakfast muffins with crunchy topping

Muffin mixture:

Streusel topping:


    Step 1

    Preheat the oven to 180°C (fan) and line a 12-hole muffin tin with paper cases.

    Step 2

    Make the streusel topping by putting all ingredients in a small bowl and rub together with your fingers until you get a crumbly mixture.

    Step 3

    Put all the dry ingredients for the muffins into a bowl and stir together. Add all the wet ingredients and mix with an electric mixer quickly until just combined. Divide the mixture between the prepared muffin cases and top with the streusel topping. Bake for 18-20mins.
