Bratwurst stuffed peppers

    Step 1

    Heat the oil in a large pan, add the chopped sausages and fry for 3 mins, stirring, until golden.

    Step 2

    Add courgettes and scallions and fry for further 4-5 mins.

    Step 3

    Add garlic and paprika, stir well and take off the heat. Leave to cool slightly, then stir in the eggs and half of the cheese.

    Step 4

    Preheat the oven to 180°C and grease a baking tray.

    Step 5

    Cut each pepper in half (lengthways) and remove seeds.

    Step 6

    Put the halved peppers on the baking tray and fill with the sausage mixture.

    Step 7

    Sprinkle with the remaining cheese and bake for approx 20-30 mins until golden and cooked through. Serve with roast or mashed potatoes.
