Bean and tomato stuffed peppers

    Step 1

    Preheat the oven to 220°C/fan 200°C and grease a baking tin.

    Step 2

    Half the peppers lengthways and remove the seeds, then put on the baking tray and bake for 15 mins.

    Step 3

    Mix the beans with the tomatoes and fill the pre-baked pepper halves.

    Step 4

    Top each half generously with grated cheese and return to the oven for another 10 mins until golden. Serve with potatoes.
