Battered turkey with pineapple sauce

    Step 1

    To make the batter put the egg in a bowl and gradually add the cornflour, beating with a whisk until smooth.

    Step 2

    Cut the turkey breasts into bite-sized pieces, season with salt and dip into the batter, coating well.

    Step 3

    Deep fry the turkey pieces for 4-5 mins until cooked through.

    Step 4

    In the meantime chop the pineapple and put in a pan together with the juice.

    Step 5

    Bring tho the boil and gently simmer for 3 mins, then pour in the cream, add paprika, curry powder, vinegar and oyster sauce and simmer for another 3 mins.

    Step 6

    Transfer the crispy turkey pieces into the pan, stir quickly to mix with the sauce and serve immediately.
