Baked minced beef tortillas

    Step 1

    Heat the oil in a large pan, add onion and fry gently for 2 mins.

    Step 2

    Add minced beef, pinch of chilli, season with salt and fry for 10 mins.

    Step 3

    Squeeze any excess liquid from the spinach and add to the pan together with sweetcorn, crème fraîche and half of the grated cheese. Stir well and remove from the heat.

    Step 4

    Preheat the oven to 200°C/fan 180°C and grease a baking dish.

    Step 5

    Divide the meat mixture between the tortillas, roll up and arrange in the baking dish (joins down).

    Step 6

    Sprinkle with the remaining cheese, cover the baking dish tightly with tin foil and bake for about 30 mins (remove the tin foil for the last 5-10 mins of baking time).
