Bacon and mustard frittata

    Step 1

    Cook the potatoes in a pan of salted boiling water for 5 mins until just tender.

    Step 2

    Heat the oil in a large ovenproof pan and fry the bacon for 3-5 mins, then add the cooked potatoes and mix carefully.

    Step 3

    Beat the eggs together with chives and mustard, season with salt and pepper and pour into the pan.

    Step 4

    Cook on a medium heat for 5-7 mins until the base is set, then put under the grill for another 5-7 mins until the top is golden.

    Step 5

    Turn over to a plate, cut into wedges and serve with some green salad.
