Apple souffle

    Step 1

    Preheat the oven to 200°C/fan 180°C and lightly grease 4 ramekins.

    Step 2

    Put the apples, butter and 1 tbsp of the sugar into a small pan and gently cook for 10-15 mins until soft. Take off the heat and stir in the cinnamon.

    Step 3

    Beat the egg whites until stiff, gradually adding remaining sugar and vanilla extract.

    Step 4

    Stir the egg yolks into the apples and divide between the prepared ramekins.

    Step 5

    Top with the egg whites and bake for 10-15 nmins until golden. Serve warm.
