Apple and raisin cake

    Step 1

    Preheat the oven to 200°C/fan 180°C and grease and base line a cake tin.

    Step 2

    Pour the oil into a bowl and add the sugar. Beat until well blended.

    Step 3

    Gradually beat in the eggs until the mixture has increased in volume.

    Step 4

    Add the flour and cinnamon and stir into the mixture.

    Step 5

    Add apples and raisins and mix thoroughly.

    Step 6

    Transfer to the prepared tin and bake for 45 – 60 mins until golden brown. Leave to cool and serve.
